Erythritol is a so-called sugar alcohol which is usually obtained by the conversion of carbohydrates. It is distinguished by its good tolerability and similar sweetness as sugar (about 70%) compared to other sugar alcohols, making it a very suitable sweetener for most applications. It is also suitable for combination with stevia extracts as tabletop sweeteners. Erythritol is also available in organic.It is also present in fermented foods such as wine, beer, soy sauce, and Japanese sake. [1] It can be fermented from glucose and is a white crystalline powder with a refreshing sweetness that is not easily absorbed. It is stable at high temperatures and over a wide pH range.
